The traditional ploughman’s lunch, famously served in British
pubs, was always begging to be made into a sandwich; cheese, chutney, ham,
pickles, salad… and it all comes with bread? Duh.
There is only
one way to make this sandwich even more enjoyable, and that is to eat it in a
pub garden by a river, washed down with a pint of excellent beer, preferably
served in a silver tankard with your name engraved on it.

INGREDIENTS
2 slices of your favorite bread
Mayonnaise
Sandwich pickle/relish (Branston pickle
is a personal favorite)
Mature Cheddar cheese, sliced
Cold baked ham, sliced
Scallions (spring onions), thinly sliced
Boston (Butterhead) lettuce leaves
Pickled onions, to serve
Spread 1 slice of bread with mayonnaise and the
other with pickle. Add slices of cheese and ham, and top with scallions (spring
onions) and lettuce leaves. Sandwich together and serve the pickled onions on
the side.
