    Queen Alexandra’s Sandwich





    In 1863, Alexandra of Denmark married the British Edward VII and became Queen of Great Britain. Result. She is said to have had a soft spot for these intensely savory sandwiches consisting of poached chicken, boiled tongue, and a mustard-laced butter. It is essential to remove the crusts before serving; these sandwiches need to be dainty enough for a queen. If you’re feeling generous, give the leftover crusts to the poor.

    Makes 2
    INGREDIENTS
    FOR THE MUSTARD BUTTER:
    2 tbsp (25g) butter, at room temperature
    1 tsp Dijon mustard, or to taste
    A squeeze of lemon juice
    1 cold cooked (ideally poached) chicken breast
    Mayonnaise, to bind
    A dash of hot chili sauce
    Sea salt and black pepper, to taste
    4 slices thinly cut white bread
    2 slices cold boiled tongue or cold roast lamb
    A small handful of salad cress
    To make the mustard butter, combine the butter, mustard, and lemon juice to make a smooth paste.
    Cut the chicken breast into small chunks and place in a bowl with some mayonnaise to bind—use as much as you like. Add a dash of hot chili sauce and season with salt and pepper.
    To assemble the sandwiches, spread 2 slices of bread with the mustard butter. Lay a slice of tongue or roast lamb on each, then add the chicken mixture. Finish with a sprinkle of salad cress and add the top slices of bread.
    Remove the crusts and cut into dainty squares or triangles as you see fit for a queen. Serve at once.
