Ramon Barros
Luco was president of Chile in the early 1900s. This was his favorite sandwich,
which, unsurprisingly, is how it ended up being named after him. It’s a simple
affair to be honest, a combination of steak and melted cheese. It’s not going
to win any prizes for creativity, but is pretty damn tasty nonetheless.
Makes 1
INGREDIENTS
1 small thin-cut sirloin steak (about
4½oz/125g)
Sea salt and black pepper, to taste
1 white roll
1 garlic clove, peeled and cut in half
Ground cumin, for dusting
1 fresh red chili, finely chopped
(seeded or not is up to you)
Sliced cheese, for melting (Swiss cheese
would work well here)
Heat a greased frying pan or skillet until hot.
Season the steak with salt and pepper, then cook it to your liking in the hot
pan.
Split the roll in half and rub the cut sides
with the cut garlic clove. Add the steak to the sandwich and dust with cumin,
top with red chili, and, finally, the cheese.
Toast the sandwich in a sandwich toaster or in a
greased frying pan or skillet, until golden all over. Serve immediately.
