I first came across the broodje haring or herring sandwich (or
roll) at a famous street food stall in Amsterdam called Frens Heringshandel.
One bite of the toothsome soused herring and I was hooked, lined, and sinkered;
the fish has the most incredible buttery texture. The rich oiliness is offset
by studs of sharp, raw onion and slices of sweet gherkin pickles or dill
pickles, which also provide a contrasting crunch to the soft fish. This is one
of the world’s greatest fish sandwiches, but I leave you nonetheless with a
piece of advice: either carry some breath mints or make sure everyone else
within a 3-yard radius has eaten one too.
Makes as many as you have herrings
INGREDIENTS
Dutch soused herring fillets
Soft white hot dog-style buns, split
open
Finely chopped onion
Slices of sweet gherkin pickles or dill
pickles
Add 2 herring fillets to each bun. Sprinkle over
some chopped onion and add slices of sweet gherkin pickles. Serve at once.
