This
one does what it says on the tin, really; it’s all the best leftover bits from
a classic Sunday roast. I mean the scraps one digs deep for: the caramelized
edge bits on the roasted meat, the crispiest potatoes left at the bottom of the
roasting pan, the stickiest smear of gravy… The ingredients here obviously
depend on what you cooked in the first place, so this really is just a guide.

INGREDIENTS
A couple of leftover roast potatoes
2 slices sturdy bread
Slices of leftover roast meat, my
favorite being some pork belly with lots of lovely leftover crackling
Some leftover vegetables, in the case of
roast pork, some cabbage would work well
An appropriate sauce, e.g. apple sauce
in the case of roast pork, mint sauce for lamb, horseradish sauce for beef
Leftover gravy, perhaps (can be reheated
if you like)
Smoosh the roast potatoes onto 1 slice of bread,
then layer up the meat and vegetables on top. Spread the other slice of bread
with your sauce of choice. Drizzle the meat and vegetables with a little gravy,
if desired, and sandwich together.
Devour, and marvel at how it was worth cooking a
whole roast just to make this sandwich happen.
