Now we really
reach the depths of the guilty pleasure pool with everyone’s favorite chopped
pork and ham in a can—SPAM. It’s salty and it’s fatty, which is why
occasionally (very occasionally) it’s so good. Other cultures embrace luncheon
meat with much more enthusiasm than we do; the Chinese love it, although not as
much as the Hawaiians, who even hold an annual festival in its honor: the
Waikiki Spam Jam!
Makes 4
INGREDIENTS
12oz (340g) can Spam
8 slices white bread or 4 white rolls,
split open
Lettuce, shredded
Tomatoes, sliced
Scallions (spring onions), sliced
Mayonnaise
Dash of hot chili sauce (optional)
Cut the Spam into ½in (1cm)-thick slices. Then
it’s just a case of layering everything up between the slices of bread (or
rolls) to make 4 sandwiches. Serve as soon as they are made.
FOR SOME VARIATIONS ON THE BASIC SPAMWICH:
Make it a breakfast Spamwich by frying
Spam slices until crisp on both sides, then sandwich them in a roll with a
fried egg.
Gently fry Spam slices and serve between 2 slices of hot
toast with a slice of melted cheese.
