The Gatsby is
named after Jay Gatsby, the extravagant millionaire protagonist in F. Scott
Fitzgerald’s 1925 novel “The Great Gatsby.” The sandwich was not named so by
its creator however (a man called Rashaad Pandy of “Super Fisheries”), but
rather by one of his customers, who upon eating it exclaimed, “This is
fantastic—a Gatsby smash!”—the comment is explained by the fact that the movie
had recently been screened nearby with great success. Pandy had created it on a
whim, having run out of all other ingredients.
The Gatsby
consists of a soft, sub-style roll with various fillings, including meat such
as masala steak or bologna, the wonderfully named “slap chips” (French fries
doused in vinegar), and a condiment, such as piri piri sauce or Indian achar (a
pickle). Although the meat and sauces may vary, it is the French fries that
make this sandwich a “Gatsby.”

INGREDIENTS
Mortadella slices
Hot French fries
Malt vinegar
Sea salt, to taste
Shredded iceberg lettuce
1 soft sub-style roll, split open Piri
piri sauce
In a hot frying pan or skillet, quickly cook the
mortadella slices on both sides until crisp.
Douse
the French fries in vinegar and salt. Layer the mortadella, French fries, and
lettuce in the roll and top with piri piri sauce. Serve immediately.
